Blackberry Gin-Ginger Champagne Cocktail
I am one of those who loves a good champagne cocktail! There’s something so festive and joyful about a little bubbly concoction that makes you immediately ready to celebrate! I wasn’t always in love with celebrating Valentine’s Day… probably because I was always single on this holiday and then when I finally got married, we always managed to get in a fight the day of Valentine’s Day, which put a huge damper on any attempt to celebrate. Whew, those early years of marriage or relationship are never easy, can I get an AMEN people??!! I feel it’s safe to say that we’ve done a decent amount of growing up and growing together as a couple over these years, though. We’ve really learned to work through so much of the crap we brought into our relationship, so when it comes to celebrating “us” these days, there’s a bigger meaning and value to it! I don’t want to miss out on one single celebratory moment I have with this guy, he’s a ton of fun!
Wow, we are diving deep today people! You saw fun cocktail photos and probably expected some light-hearted banter and a seriously good recipe to follow, and here I am talking to you about the complexity of relationships. Sorry – not sorry, I think? Anyways, we have a fun line up this week for you. Remember on my cake post a few weeks ago when I mentioned we are cooking up a fun V-day photoshoot inspo using the new Benjamin Moore “Color of the Year”, Shadow. After an insane amount of running from one store to the next and attempting to dye fabric using the Shadow paint color (not recommended I might say) just to get as close to the color as possible, we managed to put together a fun “Valentine’s Date Night In” dinner party for you and that special someone.
Today we are starting with this pretty in deep pink, sparkly champagne cocktail. Blackberries and ginger are one of my favorite combos. Toss a splash of Gin in there and I am drinking this beauty all night long! Which really means I will max out at 2, since I’m a serious lightweight these days! But in my head, I want to drink these nonstop!
Can we talk about these champagne glasses for a moment? So pretty, right? I love the simplicity and delicate nature of them. They are part of the Camille Collection at Crate and Barrel. If you are a fan of the TV series, Scandal, then you may see Olivia regularly sipping her yummy Bordeauxs from the Camille collection wine glass. I love everything about these glasses and sipping champagne or wine from them is truly amazing, trust me!

- 2 cups fresh blackberries
- 1 small fresh ginger section, peeled & sliced
- 1/2 cup sugar
- 1 cup water
- 1 bottle (750ml) brut champagne
- 4 oz. Gin
- Lemon peel for garnish
- In a small saucepan, mix together 1 cup blackberries, ginger slices, sugar and water. Bring to a boil. Simmer until sugar has dissolved (about 5 minutes). Gently press blackberries to release their juices. Allow to cool.
- Strain syrup mixture into a small container or squeeze bottle. Toss berries and ginger.
- Per champagne flute, add 2-3 blackberries, 1 tsp blackberry-ginger syrup and 1oz. Gin. Top with champagne and garnish with lemon peel.
