Blackberry Rosé Tequila Fizz

Call me sappy, but I really do love Valentine’s Day. I’m a sucker for a good holiday and even more so a sucker for any good reason to celebrate! I find life is too valuable and short not to find some excuse to pop some bubbly and toast to anything good going on. Even if Valentine’s Day has become more commercially driven over the years, it’s a great reminder to show a little love to those around you, from your significant other, your awesome group of gal pals (apparently Galentine’s Day is the new thing!), and even your family. Everyone needs to feel that they are of value and special to someone else, right? My mother-in-law is amazing at this, especially on holidays! Without fail, I can always expect the most adorable and lovingly-handcrafted card on just about every holiday or celebration. I seriously got so lucky when it came to in-laws and she tops them all! This Valentine’s Day, if I can get my act together, I will definitely try to take a page out of her book and send out some cards for Valentine’s Day. This year, I want to start doing more for others and thinking less of myself. I think Valentine’s Day will be a great way to kick that off, right?
Furthermore, another favorite way to celebrate Valentine’s Day is mixing up a really good cocktail, specifically one spiked with something bubbly! I mean, how can you not throw champagne into every drink you have, right? However, this Blackberry Rosé Tequila Fizz is rocking sparkling rosé for some bubbly action. Tequila and rosé make a surprisingly delicious combo and I’m gushing over the perfect berry-red color of this drink. I’m a sucker for red on Valentine’s Day and I’m in no way sorry about it!
This is a pretty easy cocktail to whip up, the only element that takes some effort is making the thyme simple syrup. And all that really requires is heating up some water and sugar until the sugar dissolves, tossing in some thyme to steep and then straining the liquid. Once it’s cool, I have to hold back from drinking half of it! Sugary-thyme is a dream come true! I feel like it would be incredible lightly drizzled over vanilla bean ice cream or added to chamomile tea. Who knows, just daydreaming here!
No matter what way you choose to celebrate Valentine’s Day or spread some love to those around you, I wish you an incredible, love-filled holiday! You all mean the world to me and I’m so honored that you come to my little space on the internet and listen to me ramble! Love you all!
- ½ oz tequila
- 8 blackberries
- 3 sprig thyme, plus 2 sprigs for garnish
- 5 drops Angostura bitters
- 1 oz thyme simple syrup
- 1 lemon slice
- 1 cup water
- 1 cup sugar
- 10 thyme sprigs
- In a small saucepan, bring water and sugar to boil. Reduce heat and simmer until sugar is dissolved. Remove from heat and add thyme. Allow to steep for 10 minutes. Strain mixture and toss thyme sprigs. Cool simple syrup completely.
- In a shaker or large cup, muddle together the tequila, blackberries, thyme sprigs, bitters and thyme simple syrup. Briefly shake with a few ice cubes. Strain into a champagne coupe or lowball glass. Top with sparkling rosé and garnish with lemon slice and 2 thyme sprigs.
