Sriracha Lime Chicken Skillet

In our house, we usually eat chicken 3-4 nights a week. I like that it’s easy to cook, healthy and a great source of protein for my husband. I say this, because at the beginning of 2015 he starting weightlifting and trying to eating better, which is fantastic for me! What girl doesn’t love a buff guy?  However, you can only eat chicken so many times before it becomes redundant and blah.

This recipe was a wonderful change of pace and packed some serious flavor.  Surprisingly the sriacha was not a spicy as I was expecting. The lime/ mint combo definitely helped tame some of the sriracha’s kick, while adding a refreshing flavor component to the dish. Did I mentioned the huge bonus of this recipe?  One dish!!!  Just bake it all in the skillet and voila, dinner is served!

The key is to let this scrumptious mixer sit for some time and allow all of those flavors to marinade.

Sriracha Lime Chicken Skillet

Serves 4

Ingredients

8 boneless chicken thighs
1/4 cup extra virgin olive oil
juice of 1 lime
1/4 cup white wine
1/2 large onion, sliced
1 clove garlic, grated
1 tablespoon sriracha
Salt and Pepper
8 thin slices of lime
1 tablespoon mint, rough chopped

Instructions

1. Wash and pat chicken dry.

2. In a large bowl, combine olive oil, lime juice, white wine, onion, garlic, sriracha, salt & pepper and chicken thighs.  Toss to coat, cover and refrigerate for 1 -4 hours.

3. Preheat oven to 400 degrees.

4. Place chicken mixture in skillet. Place 1 lime slice on top of each chicken. Sprinkle with chopped mint.

5. Bake for 20 minutes, then broil for 5 minutes until tops brown and start to crisp.

6. Remove from oven and serve.
